Ingredients
Sticky Date Pudding
10 dates chopped
2 tbsp boiling water
1/2 tsp bicarb soda
1.5 tbsp butter
1 tbsp brown sugar
1.5 tbsp self raising flour
1 egg yolk
Caramel sauce
2 tbsp brown sugar
1 tsp butter
1 tsp milk

Instructions
Sticky Date Pudding
- In a large mug place the chopped dates and water. Cook in a microwave for 1 minute to soften the dates.
- Add bicarb soda and mash with a fork.
- Add the butter to the mixture and microwave again for 10-15 seconds until melted.
- Add sugar, flour and egg yolk, then mix to thoroughly combine.
- Place in the microwave for a 1 minute.
Caramel sauce
- In a small microwave-proof bowl, add sugar, butter and milk. Cook in the microwave for 20 seconds.
- Remove and stir. Repeat several times until the result is a dark caramel sauce.
- Drizzle over sticky date mug cake.
