Ingredients
- 1 tablespoon butter
- 2 tablespoons milk
- 3 tablespoons soft brown sugar
- ½ teaspoon mixed spice (or ¼ tsp all spice + ¼ tsp cinnamon)
- ½ teaspoon vanilla extract
- 2 tablespoons mixed dried fruit
- 3 tablespoons self-raising flour
- ½ teaspoon baking powder
Instructions
- Place the butter in a microwave-safe mug and heat for 30-40 seconds until melted.
Allow it to cool slightly. - Add the milk, sugar and vanilla. Mix well.
- Add the flour, mixed spice and baking powder. Mix until smooth.
- Stir in the dried fruit.
- Microwave for 1 minute 30 seconds.
If still wet on top, continue in 20-second bursts until just set.
